How to survive in frozen Russian Siberia! Part 2. Food

In cold our body burns calories faster that is why the tighter(more calories) you eat the more chances of your survival...Being a vegetarian is unreal...



My aunt killed a cow and here she is selling meat...





Exemplary daily ration in the cold season is:
1. Meat, poultry, fish(boiled, fried, stewed)
2. Hot soup(Meat)
3. Butter
4. Bread
5. Milk products(cheese, curd, sour cream)
6. Hot tea
7. Potato, pasta, rice, buckwheat  
8. Vegetables and fruits (fresh or stewed).



From time immemorial Yakuts eat some kinds of fish frozen uncooked(raw)...Such as (whitefish)  "CHIR", "OMUL", "NELMA'', ''PELED'' and ''MUKSUN''.  And also young horse meat and liver. In that way the more nutrients are kept and there is no loss of time in extreme conditions.
Nowadays these dishes are served as delicacies)))


Here are some recipes of yakutian  dishes:




"Stroganina"-
  frozen fish which is eaten uncooked(raw) with salt and pepper or sauce. 








Giblets...
are cleaned, washed and cooked on average fire for 2-3 hours...
Add salt and flour as for liquid sauce...





"Khaan" - blood sausage...

Intestines are filled by cow's or horse's blood. 50% blood / 50% milk. Add some salt and tie it. When Blood sausage of horse blood is boiled it becomes lighter. Cook in large saucepan... Dip it in hot salted water and cook on average fire. Turn the sausage carefully so as not to burst it... Served on the table warm...
